Chemical composition of einkorn

Rich in carbohydrates, proteins, fats, it has a high nutritional value of cereal, 100 g of einkorn provide enough protein for one day. It contains twice more unsaturated fat and wheat due to the fibers is much more easily digested. It contains very little gluten.

Its proteins contain 8 kinds of amino acids, including lysine, which rarely occurs in grains. According to recent studies einkorn is good food for diabetes. It contains soluble carbohydrates, polysaccharides have the ability to strengthen the immune system.

Einkorn is rich in micro and macronutrients, necessary for the proper functioning of the human organism. The results of the study of 5 varieties of einkorn and 150 varieties of wheat bread, showed increased content of Zn, Fe, Cu, Mn, Ca, Mg, K and P in einkorn compared to wheat. Triticum monococcum is characterized by higher concentrations compared to bread wheat for Zn – 72 vs. 35 mg / kg, Fe – 52 vs. 36 mg / kg, Mn – 46 vs. 30 mg / kg, Cu – 9 vs. 6 mg / kg, Mg – 1,51 g / kg vs. 1,125 g / kg and P- 5,41 g / kg vs.  3,10 g / kg (Hidalgo and Brandolini, 2014).

Of particular importance in healthy diets is the content of Fe, Zn and Mn. Twice as high in Fe and Zn and more than four times Mn was found in the einkorn compared to modern wheat and barley, which supports the importance that occupies this culture in modern dietary.

As regards the content of minerals, Bálint et.al. (2001) found slightly higher levels of iron and manganese as compared with the ordinary wheat,until Jantsch and Trautz (2003) suggest a high content of zinc and magnesium. Abdel-Aal et al. (1995) found higher levels of phosphorus and potassium in the einkon compared to common wheat. The ash content in wholemeal grist of einkorn is usually higher, compared with durum wheat and common wheat (D’Egidio et al., 1993; Grausgruber et al., 2004b).

Einkorn has antioxidant properties, stimulates metabolism, assist in removing toxins from the body and activates the kidneys, improves digestion and circulation and has vasodilatory properties, unlike the rest wheat has an alkaline effect, easily digestible, supports intellectual activity.
