SEGMENTATION OF CEREAL CROPS, ACCORDING TO THE GLUTEN CONTENT

Generally cereals can be divided into three groups: (Zarnkow, 2014):

  •  Gluten-containing cereals:

Barley (Hordeum vulgare);

Wheat (Triticum astivum);

Oat (Avena sativa)

Rye (Secale cereale)

Emmer (Triticum dicoccum)

Einkorn (Triticum monococcum)

Kamut (Triticum polonicum?)

Spelt (Triticum aestivum ssp. spelta)

Triticale (xTriticosecale)

Тritordeum (hexaploid)

  •  Gluten-free cereals

Millet (e. g. Panicum miliaceum)

Sorghum (Sorghum bicolor)

Rice (Oryzae sativa)

Maize (Zea maize)

  • Gluten-free pseudo cereals

Amaranth (Amaranthus hypochondriacus)

Buckwheat (Fagopyrum esculentum)
